Summer is approaching and it is high time the stews and soups were swapped for healthy salads in order to keep our veggies up.

Here’s another guest contribution from Ann Catrin Verloe and this time she is providing us with some cracking go-to salad recipes which often just use ingredients we tend to have stock of in the kitchen.

Carrot & white cabbage salad

Carrot/white cabbage salad:

This is one of my favourites.

Ingredients:

  • Grate half-half carrots/cabbage
  • Olive oil (or lemon juice if you want to save calories).
  • Leftover chicken (from yesterday’s dinner)

Ingredients:

  • Potatoes and chipolata (from yesterday’s dinner)
  • Cherry tomatoes
  • Cucumber
  • Red balsamico vinegar

quinoa salad

Ingredients:

  • Quinoa
  • Peas
  • Cucumber
  • Cherry tomatoes
  • Yellow bell pepper
  • Pomegranate seeds
